What do you mean by "video scanning"? What exactly is it doing?

For iPadOS15, Centre Stage settings/controls are accessed from the Control Centre whilst a supported App is running. Swipe downwards from top-right of the screen:

Centre Stage was introduced with iPadOS15 - and is currently only supported by 2021 models of iPad Pro, the iPad9, iPad mini6 and iPad Air4.

Not really a secret. Apple announced it for iOS 15 a while ago. And just added it to their new iPad Air the released in March.

There aren't any controls for it. It works when it detects you aren't centered.
