Just purchased a Apple watch SE and in the box was a white cord with a round disc on one end and a small plug on the other. I don't know what it's for.

The round disk is the magnetic charger. You place this on the back of the Apple Watch and the magnet will lock onto the Apple Watch.
The other end is a USB-C connector and you can use any USB-C port on a personal computer.
You can use the USB-C charger from a recent Macbook Pro, iPhone, or iPad.
If you have an older Apple Watch, you can use the charging puck and power brick.
You can purchase any manufacture's USB-C charger from any retailer, such as Best Buy, Staples, Amazon, etc.... A 20watt or higher charger will enable Apple Watch Series 7 Fast Charging. But any size USB-C charger will do.
You can get a USB-C to USB-A adapter and use any USB-A port or charger (this will not enable Series 7 fast charging as the USB-A standards are limited on how much power they can provide).
