I ordered a MBA with the upgrades of 512gb storage and 16gb ram on April 30. It changed from processing to preparing to ship on May 7. I checked last night (which was May 7) that my credit card hasn’t been charged yet. My estimated delivery window is between May 7-26. I’m getting impatient cause i need it for school. Can someone tell me their delivery experiences with their custom MBA?

You can't base today's worries on year-old experiences. As you have probably guessed ... things have changed but reactions to COVID-19 are still causing monumental problems in scheduling and delivery dates.
If you are that worried about the start of your school year, you may can cancel your order at this point and secure a cheaper alternative to provide for school needs. Maybe resell the interim computer on eBay later after you get the Mac you want.
Other's experience has no impact on your purchase. When the computer ships your card will be charged. Once shipped you should receive it in a few days.
Moving a little slow out of China since Covid so may take longer than usual.
