Anybody heard of Sidecar showing up accessing their camera on the iPhone when they do not on an iPad

Your question doesn't make sense as you've written it. Sidecar works between compatible Macs and iPads, not with iPhones.

It would be better if you can please re-post with a screenshot, in order to understand the phenomenon better. Images/pictures speak louder than words.
