If I turn off purchase sharing, does my family lose access to Apple Music & AppleTV
No. Purchase Sharing only applies to music you buy from the iTunes Store, not music you lease with an Apple Music (or other) subscription.

Are you sure? I am on a live chat and the advisor is stating they will lose access to Apple Music subscription. It's all very confusing.
