Not a politician or journalist I'm pretty boring actually. I didn't want to sounds strange/ paranoid but I have been stalked by an ex-employee and she seems to know everywhere I go. She seems to have information about me that I can't figure out. I get all types of junk mail including ***********.
Everyone who has an email address gets spam, including the adult variety.
If Apple is your email provider, see here:

I received an email today about spyware that can be installed on any phone called mSpy(?) without needing physical access to the phone. I don't know enough about this subject and couldn't find any helpful information.
From mSpy's web page: "If you want to monitor an iPhone, you will need that phone’s Apple ID and password in order to set up monitoring. You might need to have physical access to the device for a few minutes to enable the iCloud backup and get the verification code."
My understanding is Apple iPhones can't be hacked but can spyware be added?
In order to have spyware added, the phone would need to be hacked.
Regarding your ex-employee. It's amazing the amount of information you can find out about someone if they have any online presence. Are you on Facebook, LinkedIn, Twitter, Instagram or any other social media platform? If so, there's information out there about you. She may also know you well enough to make good guesses and then use your responses to make more guesses.
It is possible that your Apple ID has been compromised which would give her access to a lot of information. If you think that's something that could have happened, start here:

You should keep records of the stalking in case you need them for a police report.

Is your phone jailbroken? Has anyone you don't trust had access to your unlocked iPhone for more than a few minutes? Are you a well-known politician, activist or journalist? If the answers to those questions is "No", you're phone doesn't have spyware on it.
It might be more helpful if you explain what's happening on your phone that makes you concerned.
