My Apple power adapter says it has various outputs, including 5V. How can I select the output voltage or is it done automatically when connected to a 5V or 9V appliance?

To power or charge a Mac, you can not simply assert a Voltage against the power inlet. NOTHING will happen.
When used with a Mac, a USB-C power adapter uses USB-C Power Delivery protocol. The device negotiates with the Power Adapter over USB, and selects the power levels it prefers (or none).
The Device is in charge of the entire process -- the power adapter is a slave.

Which Apple adapter do you have specifically? The specs should be on the Apple website or the literature that accompanied the unit.
If it came with the Mac, use it. It's designed for those particular devices they come with.
I asked because it has the same connector as my Canon camera and I was wondering if it could be used as mains power for the camera (which can be done, but Canon charge an exorbitant amount for a mains connector). I wondered if the device that is attached to the Apple mains unit automatically sets the output voltage. It is a MacBook Air 20w power connector and there are no switches on the unit to select output voltages.
