How do I get backups from 60 days ago

If you've made backups in iCloud since then you'll only have the most recent state of your device.

If you've backed up to a computer and saved a backup history you might have one that old.

Obtaining iPhone Backups:

Look in a location you stored this backup in. Note that you cannot downgrade to a prior version (pre-iOS 15, in this case).
