Health App - Retrieving complete Old data

Got it. At this time, the Health app does not provide the option to be able to view all of the categories combined on a daily basis.

However, you can follow this link to submit your suggestion about this type of feature to Apple directly: Feedback - Health

To see the data for a particular category:

Open the Health app.

Tap Summary.

Tap on category you want to see.

Scroll to the bottom.

Tap on Show All Data.

You should then see a breakdown for each day that data is available.
