Can I use one Apple ID, set it up for family sharing with myself, to access my multiile Ape Ids, for two iPhones, different numbers, amd have seamless working access across all of my Apple devices?

Yes. You can create a family share between your Apple IDs. Not sure the experience will be seamless as each ID would maintain its own data but apps would be shared.
I have two different iPhones. In use the old one having a different number but the same Apple ID as in the new one for my sports activities. I’m not aware how to connect my watch to this old phone. Can you guide me please? Do I need to disconnect my Bluetooth connection from the new one and connect it to the old one and then back again when I have to connect it to new phone?
