Welcome to Apple Support Communities. We're happy to help you with this. Do you have Auto-Lock enabled on your iPhone 11? This features allows the screen to lock after a specified time frame, even with the app running. To check, go to Settings > Display & Brightness > Auto-Lock, and set your desired time frame.
