Using only one monitor, how does one transfer from old MacPro to new studio?

Connect your Time Machine used for the MacPro to the Studio and during initial setup select restore from Time Machine backup. You can also do that after initial setup by using Migration assistant.

You can also move the monitor connection from one Mac to another when you need to see the screen.

If you connect both Macs via wifi that is slow. An ethernet connection is fast and so is connecting the Time Machine backup to the Studio, You can connect both Macs together by an ethernet cable.
