Going through my pictures on iPhone (11 with all the latest updates) I see all the pictures that I have shared on Instagram are missing the geotag.
Why does this happen and how can I correct it?

Issue solved.
It turned out that photos that are uploaded to Instagram shows up twice in the phone's Photos.
First the day the photo was taken - including geotag
Second time when the photo was uploaded to Instagram - without geotag.
Since this happened days apart I did not scrol through all photo to check.
I am not using Instagram any longer, but Instagram may have saved the uploaded photo to Photos, if you used the app to edit the photo.
The original should still be there in Photos, try to revert the photo to the original.
Photos is removing most metadata, like the locations, when we share photos, so we do not accidentally give away private information.
I opened Instagram > Add Photo. I have only given Instagram access to selected photos (Managed) > Manage > Select more photos and upload from there
Not sure what you mean by "Instagram may have saved the uploaded photo to Photos" The Photos were never edited simply uploaded to Instagram. This alone deleted the metadata.
Then I misunderstood your question, sorry. It should not happen. When you share a photo from Photos, the photo in your Photos Library should remain unchanged. How are you sharing to Instagram?
For the shared photo IN the social media not to have a geotag I understand, but why is it deleted from the iPhone?
