How do I know if my stolen iPhones data is actually erased?

i had my phone stolen last week, i pressed erase data, and reported as lost. it carried on reporting its location for a couple of days after (on the find my phone app) , then stopped. Its now reappeared. Doesn’t seem active (if indeed you can tell once you’ve erased the data from an iphone). On the safari version of icloud (via my phone) it says 'device erased’ (doesn’t mention this on the app)…but how do I know for sure if it has actually been erased?

Hi Jack, I have followed all of those steps (It wasn’t insured but otherwise have done all of the rest)… my question is specific - how can I KNOW that my data has been deleted? One of the attached images says it was deleted at 5:50am last Sunday …but does that mean the data was wiped or just that I initiated the deletion. Also is there a way I can see if other devices have attempted to log onto iCloud?
