Why has the image on my screen when I open my MacBook Air and enter my password been changed from what I chose? Should I be concerned about malware?

The login screen or "lock screen" image can no longer be changed in recent macOS versions. If you had designated a custom image or photograph in the past, a recent macOS upgrade or update would have removed it.
