Received message on iphone 6s saying "My selected mobile network is not longer available. Choose a different network in Settings. How do I know which is the best? Are they different networks with their own contracts or do I keep my Virgin network contract?

Apple does not provide cellular services, you need to contact your provider. Some cellular network changes my have "obsoleted" your phone and they want you to buy a new one. I went through this last year with my provider and my 6s. It may not have the hardware requirements for these bands.
