Pairing and Software Update

I got an Apple Watch SE and I am trying to pair it through the Apple Watch app but when I hit the pair button it is telling me there is a software update that is needed to pair so I try and update it but then it’s says that it is unavailable because I am not connected to internet. I have full bars though for my internet! What do I do?
