Why don’t I have a option to turn on and off my caller id

That likely depends on your cellular carrier and type of service.
If you’re in the U.S. you can hide your caller ID for (each) one call as follows: Precede the number you dial with *67.
If you are calling (987) 654-3210, for example, instead dial *67 (987) 654-3210.
