My Apple ID device is locked and I do not remember my phone number I opened it with ,I would love to change the number on my Apple ID so I can unlock it ?

To change the number, you must first unlock your Apple ID. Were you able to complete the steps in the Related Article above to unlock your Apple ID?
If you were able to reset your password, you need to change/add the number on your Apple ID. Look in the Security section when signed in online. You may have to add the new number before you can remove the old number. After the change, allow up to 24 hours for the change to sync. Before trying to make the change, sign out of Messages/FaceTime on all devices/computers.
