deleting apps
I don't want to use the fitness app ... it is getting in my way on my phone. My phone let me delete it from my home screen, but says it is remains in my library.

Fitness is embedded in iOS and WatchOS. Yes, you may remove it from your Home Screen, as you did. You said it was “getting in my way”, so now presumably it is not.
Having deleted it from the phone, it appears to display as blank underlines on the phone. When I glance at my phone, I want to see the time ... I still have to press a button to get the time. Sounds like I have to really do the unpair and delete. But now that I have deleted from the home screen, how do I delete it fully when I unpair. How do I bring it up?
I think the best you can do is hide the app from the home screen,it will still be in your app library but at least you won't see it.
It seems that if you repair the watch it now reinstalls the fitness app,it didn't used to do that.
I removed it from home screen ... unsynced the watch ... removed it from library ... resynced watch ... AND IT'S COME BACK!!! UGH!!
To delete the fitness app you must first unpair your watch and then you can delete it completly,the phone has hidden the fitness app from the home screen but it is still installed on the phone and it is is in your app libray.

Delete an app from App Library and Home Screen: Touch and hold the app in App Library, tap Delete App, then tap Delete.
