What app was this you are referring to, a third party app or an Apple app baked into the macOS.?

I will add the current stable release of Big Sur including bug fixes and security updates: macOS 11.6.6

Sorry nothing there helped restore touch-bar access to that info. .

There is another article from Apple Support that may be worth looking into.

Seems there are apps available (Eg: Keyboard Maestro ... BetterTouchTool ) that let you create Touch Bar buttons.

Have never used any of these apps ... so don't know how useful they may be.

NB: It was the section:" Change Touch Bar buttons for apps" that seemed so promising...

Guess you tried opening Screen Time app, and following those "customise" app details.
