Hi, I'm using 2020 Macbook Pro 13' (not M1) with Catalina, and iPad pro.
I want to add a signature on preview using iPad. When I choose iPad from the options, nothing happens on my iPad. But what I learned from other video clips, iPad screen should change into some kind of a signpad.
Other options like trackpad or camera are working fine.
Please help me.

There are a few ways to create a signature using your iPad, Mac's built-in camera, iPhone, or trackpad. Since the steps aren't working with the iPad, try restarting your iPad and Mac. This can often fix issues with using the iPad with your Mac.
Once this is completed, here's how to create a signature:
Create a signature using your iPhone or iPad: Click Select Device to choose a device (if more than one is available). On your device, use your finger or Apple Pencil (on iPad) to sign your name, then click Done. If you don’t like the results, click Clear, then try again.

Actually, I've already turned off my Mac and iPad, it failed at first. But interestingly, after I tried a couple times (turning off the machines) more, than it worked!
