Data transfer from old Mac

I have a 10-year-old iMac that has been in storage for the last three years since we moved to Ireland. I'm going to buy a new one, but I'm wondering about the best way to get photos, documents, etc. transferred from the old one. I have a Time Capsule for it, but I could also get a large thumb drive. I don't want to transfer any programs, etc., just the data. What's the best way to go?

You have the option to use Wi-Fi in transferring your data from one Mac to another. While this is convenient, both Macs needed to be connected to the charger and at the same time, the most updated macOS should be installed on both.
