System log date in new Macbook Pro

I did not unwrap and set up my new MacBook Pro until the afternoon of the 31st May 2022 but the system log records these processes (including the name I gave the laptop) as occurring at 2am on the day before. Why? I have set my time zone as Australia Eastern.

Similar questions

date and time used my MacBook Air after a month of traveling. The date is set to 7th February 2023 and the time is wrong as well. I have updated to most recent iOS and restarted several times. Set time and date automatically is on, location is on. But is doesn’t update to current date and time.
