What am I paying for?

I keep getting charges from Apple for small amounts on a monthly basis, with no indication of what it is paying for. Some charges are from family members, authorized on the account, and some are from me. But the email notice I get from Apple doesn't tell me what the charges are for. How can I get an itemized statement explaining the recurring charges? And how can I close ones no longer relevant, such as apple care for an old device no longer in use?
