Can I recover my data from the last 30 days, Even if it has been permanently deleted

Someone, who I know, he has deleted a bunch of data from my iPhone 12. It’s permanently deleted, from what I can tell. Can it be recovered?

Restoring from a backup erases all data currently on your device. Any data newer than when the backup was made will be erased. A restore is an all or nothing restore. You can't access a backup to see the contents and only restore certain files.
