Can I be asked for photo ID when I use my apple pay?

No. Apple Pay does not require photo ID when making purchases.
The store may require Photo ID, but I don't know what they would be comparing it to, so no real reason for them to request it either. The store gets no information from the card used with Apple Pay, so the ID would be useless to them.
