My watch was supposed to be backed up to my iPhone no contacts from my I watch were uploaded to my phone from my watch please help all my contacts were on my watch I need them help!!!

How do we reset my watch with my info from 6:15pm today

Apple watch I accidently removed all data from my apple watch 5. I tried to connect my phone and watch but all backup was removed. So can I get that data back somehow?
