I meant to subscribe to Apple Music but somehow got subscribed to Apple One, when I tried to cancel Apple one the only option I was given was to change from Family to individual or student. It does say I have Apple Music pending.

Pls Contact - Official Apple Support so they can help you cancel Apple One.
Also, if you no longer see Apple One in the list of your subscriptions in your iPhone's settings, most likely it's already been cancelled.
