Follow the steps here to unpair it form your iPhone and wipe it: link-> What to do before you sell, give away, or trade in your Apple Watch, or buy one from someone else - Apple Support

Then follow the steps in the support document you posted from to pair it to their iPhone: link-> How to pair your Apple Watch with a new iPhone
