All modern computers and apps use Unicode. Instead of switching fonts to get special characters, you use a special keyboard or something like Character Viewer to input them, and the system automatically uses whatever fonts are appropriate to produce the display.

You need to customize your list to add that category. Click on the gear wheel if you have it or the 3 dots.

Click on three dots (or gear wheel) in top left corner and go to Customize List)

Scroll down list to find Musical Symbols

What for exactly? Please provide details about what you are trying to do.

Apple already provides some fonts with music characters
