Working with pages in numbers off-line

I recently had to have a new hard drive put in my 2011 iMac And I don’t know how to work off-line with Pages and Numbers. I am a retired octogenarian who does only personal work such as making greeting cards for family throughout the year, writing poetry, keeping notes to myself for myself, Keeping a strict personal budget, etc. I do not want to work on this online, Nor do I want it online at all. How do I work off-line?

You can always work offline and store your files (Numbers & Pages) on your internal drive, without iCloud.

You create your own folder structure for your files.

Organize files in folders on Mac - Apple Support

Select these folders when you save Numbers or Pages.

Everything without "iCloud" is a local folder.

You are very welcome, glad that I could help.

Many people don't like the cloud and prefer to have everything local, that is totally OK.

But if you have everything on your local computer you should thing about backup.

As soon as something goes wrong with your computer all data could be lost!

As an absolute minimum you should consider to have multiple copies of the data.

For most files I create a new file (Save as) every month / quarter. If something goes wrong with the last version I still have the one from last month / quarter.

Best case you copy your data on TimeMachine (Apple backup software) or a external memory stick / hard drive.

Then you have something if you computer is completely dead.
