How can I see where the last time my lost watch was connected to my phone?
No they CANNOT reset or access the watch as long as you don't unpair it from your phone;see this;
Unpairing the watch removes the activation lock and allows anybody to use the watch.

Findmy only shows the last known position of your watch for 24 hours,after that you have to try and find it manually.
