Can any one help me to fix this issue. My new Apple Watch SE keep asking my old id while setup, where I have deleted the old one from everywhere. Now my phone has only with my latest id. I am using iPhone 11. Please help to fix this.

You can ask apple to remove the activation lock online on this page;

If you can't remember/gain access to the apple id that paired the watch to the phone.Take the watch and it's receipt with the serial number along with some photo id and any other proof of ownership to an Apple Store and request that they remove the Activation Lock for you.
My Apple Watch SE while pairing keeps asking old id.
