I left my iPhone 13 pro in my car in the sun for about 25 minutes. How do I know if it overheated ?

When the iPhone overheats, you first get a warning message and then it turnes off to avoid any permanent damage to the phone.
That being said, heat is always bad for the battery life and is actually one of the factors that reduce most battery lifetime.
There’s no accounting for randomness. I’ve had my current iPhone 7 battery since Dec 2018, replaced under Apple’s worldwide promotion for USD $29. It’s got about 650 cycles, is still reporting 92% battery health by iOS, and coconutBattery reports anywhere from 89-93%. It’s had the “allow iPhone to cool” message at least five times.

It would probably be logged in the diagnostic data, but you can’t access that without an Apple diagnostic service. I’ve personally seen the overheating warning where it stopped everything.

Will AppleCare help ?
I suppose you could ask, but for the most part one or two times isn’t going to cause permanent damage. It’s going to suspend most functions so it’s producing minimal heat on its own. The electronics can handle that kind of heat without permanent damage. It might degrade the battery somewhat, but in my experience it won’t necessarily be severe.
