Subscriptions auto-renew unless canceled. This has nothing to do with Apple Pay. It may use a card you added to your Wallet App, but Apple Pay is not involved in any way.
Cancel the subscriptions: link-> If you want to cancel a subscription from Apple - Apple Support
Then contact Apple Support for a refund: link-> Request a refund for apps or content that you bought from Apple - Apple Support
