Yesterday my iPhone 11 Pro screen suddenly started looking different. I did not do an update. The folders changed color and images in apps look like X-rays. I can screenshot the X-ray image but it saves to me Photos normally so I can’t even post one to share here. I did a hard shut down, didn’t help. iOS 15.5.
Go to Settings/Accessibility/Display & Text Size and turn off any switches that may be on, except for Auto-Brightness (which you set to your preference).

Classic Invert was on!
