I just bought an iPad in the UAE, set everything up as UAE but when I go to purchase the AppleCare it’s showing in GBP and also asks me to confirm I’m a resident in the UK.. Have I set something up incorrectly or is there something I need to change. Thank you

What is the model number in Settings>General>About?
I’m guessing you bought a gray market phone that was originally sold in the UK, in which case the warranty is only valid in the UK and AppleCare would have to be purchased using a UK payment method and billing address and would also only be valid in the UK.
