So if you are always planning to have your iPhone close to you whenever you use your watch for calls, texts, etc, can you get away with just purchasing the GPS version instead of having to get the GPS/Cellular one?

Correct, I always have my iPhone when I do workouts and therefore do not need the cellular version.
You will only need the cellular version if, as you said, make calls and texts without you iPhone nearby.
