For content with soft subtitles, you should be able to set the active subtitles to Off.
Change subtitles or languages for videos in the Apple TV app or iTunes Store - Apple Support
The defaults should be a device setting, not an app setting, if possible for your device.
A few exceptions may have hard coded subtitles that can’t be turned off. (I don’t recall that for any Apple TV+ content, though.)
