is there any way to disable the show hidden files from finder?
That shortcut is built into the framework used to present those Finder windows. It is also present in File Chooser panels in Apple applications that also use that framework. Apple would have to remove this functionality from that framework, and your only option is to not use that keyboard shortcut.
