Can’t Find The “Repeat Alerts” Option in iPhone Notifications—>Messages
Disappeared when using/setting up Apple Watch 7.

Settings > Notifications > Messages > Customize Notifications…

It should be at Settings > Notifications > Messages > Customize Notifications (scroll all of the way down for that option).
Thank you. Who would have thought that alert repetition would be called Customize Notification when, in fact, it is the only customization available?
