I have a brand new apple watch but no iPhone (well I do, but it's a work one and pairing has been restricted). I'm looking for a solution that doesn't involve buying an new iPhone and/or paying for cell service I don't want (my work phone is enough).
So, can I buy an old iPhone (e.g. 7 or newer) with no sim and pair it over Wi-Fi? Would that be enough to get the watch working?

You can only use an apple watch with an iPhone .
A family member can set it up for you, but beware that some functions will not work when you do that. See this Link for further reference

I am talking about using the watch with an iPhone, just one w/o a sim card. Will an apple watch pair it via wi-fi with an older iPhone w/o a sim card.
