When cleaning my keyboard, I like to turn it off so as not to generate a bunch of unwanted commands, etc. This was easy in the past, but with my new M1 iMac, when I turn off its power switch, the keyboard is still live and connected. What's the story?

The switch doesn't work if you have the charging cable plugged in. It's only to turn off the keyboard while on battery.
Is this the switch you found?
You can also use System Preferences > Bluetooth to close the wireless connection:
I have a Magic Keyboard and the on/off switch doesn’t function. It’s not a big problem for me as I always clean the keyboard when the iMac is shutdown.
I’m still in warranty so I plan to get it replaced / repaired but even left on it holds the charge for a long time.
Yes, that's the switch. It seems to do nothing. It will be interesting to see whether disconnecting the Bluetooth connection holds, or whether the keyboard reconnects when I start wiping the keys.
