What adapter is recommended to attach the Apple USB SuperDrive to my 2020 MacBook Air?

Any USB-A to USB-C adapter should work.

From what I've seen on the forums, not all adapters work because some do not transmit sufficient power (the SuperDrive draws more current than the USB-A standard).

I suspect the Anker dongle you link would work. I have personally used this Nonda adapter to connect my SuperDrive to multiple recent (Thunderbolt 3/4/USB-C only) MacBook Pros and Airs.
