Apples Garage Band doesn't apply a .sf2 soundfont, nor does To MP3. At this point, I contacted a web contact from 2 decades ago: he's still running tiMIDIty on Linux, and it still works fine. So, he did the job for me. They sound great!

I'm not saying Apple don't provide a solution, but clearly Music lacks many of the features of iTunes, and if you cannot find the familiar workflow then you'll need to find another. GarageBand is free from Apple and would seem the most obvious route, but I cannot recommend anything in particular myself as this isn't a need I have or have personally tested. Perhaps others have some insight to share.

There would appear to be plenty of free MIDI to MP3 convertors to choose from. GarageBand should also be able to do this.

So, I gather that Apple no longer provides a solution.
I'd appreciate a recommendation of a free 3rd-party one that OSX users have found reliable and free from spyware & such.
Glad you found what you needed. 🙂
