Name on outgoing email on ipad

For iOS12 and earlier:

Settings > Passwords & Accounts > [Your email account] > [Account] > Name - change as required

Are you trying to change the name that appears (as the sender) for the email account - or are you instead attempting to add a your own [new] email account of your own? Something else?

I am trying to change the name on my outgoing email which always says the email is from my late husband’s iPad. So I changed the name on the iPad, but the name still appears as the sender of the email.
