If you are stuck—

You can always force quit a shutdown by holding the power button/TouchID for ~6-10 sec.

Force Shut down your Mac. and try again. your update...

Log out, sleep, wake, restart or shut down your Mac

Shut down or restart your Mac - Apple Support

You can do a "Safeboot" for running the update if you still have no success; > log in an try again.

SafeBoot How to use safe mode on your Mac - Apple Support will sort many anomalies

if it is hosed—

ref: Revive or restore a Mac with Apple silicon using Apple Configurator - Apple Support
