Previously I had my Apple SE watch and iPhone11 paired.
iPhone was STOLEN and I locked and erased the data on phone.
Q: Now I need to pair my Apple Watch with new replacement iPhome? Can’t find how to restore to factory setting. Any ideas how I get this done?

From a web browser,sign in to iCloud.com with your Apple ID.
Go to Find iPhone.
Click All Devices at the top of the screen.
Click your Apple Watch.
Click Erase [device]. Select Next until the device is erased.
Click Remove from Account.
Then;
Apple Watch w/ new phone
