No way I can see of removing this random password that I have not set!

From your admin account — try disabling and re-enabling the guest account several times and test

I have seen this suggested elsewhere. I have tried this to the point of boredom and not found it to have succeeded
Why not list what you have done... or we play a endless game of whack-0-mole...
did you try from the Terminal.app copy and paste:
sudo fdesetup remove -user Guest

OK, apart from that, just multiple enable disable, sometimes locking the padlock, other times not bothering.
Yes I am seeing the same error with the command line...
Just for fun did you try logging into your admin using—SafeBoot How to use safe mode on your Mac - Apple Support will sort many anomalies
and try from your >System Preferences>User&Groups> to uncheck the Guest user and compare your results
Yes, it is because you have FileVault enabled. A Safari-only Guest is all that is available.

This gets interesting.
Over to you guys!

Who knew!
Well, you did, obviously. And I guess I worked it out, too. But what a bizarre and well concealed effect!
I’m not sure how well-concealed it is. There’s a note about it in the instructions about Users, Groups, and Guests.
Set up users, guests, and groups on Mac - Apple Support
Is the Guest user still logged in?

It has been unable to log in (as far as I can tell). I tried to enable it earlier today to let a friend use safari without seeing my personal material. The machine had been recently rebooted because of the upgrade to 12.5, so it was unlikely that Guest was previously logged in
